1.Clean ox leg and tripe very well. Boil with enough water and little salt. Cover and simmer until tender. Remove bones of ox leg and cut into thin strips together with tripe.
2. Saute garlic onion and chorizo in oil. Add tomato sauce, Worcestershire Sauce and wine. Cook for 5 minutes. Add broth and simmer for a few minutes. Add the rest of the ingredients. Season well. Note: (Make a broth 120 Ml with Stock Cubes).
